CACIOLA

This is one of my favorite recipes from my mother.

1 lb. Chicken breast

2 - 3 cloves of garlic

salt and pepper

olive oil

1/2 c. to 1 c. parmesan or romano cheese

3 - 4 eggs, scrambled.

Lemon juice (about 1 whole lemon)



Cut the chicken into bite size pieces. Heat oil in a fry pan and cook chicken with garlic, salt and pepper. Squeeze lemon or add lemon juice to chicken while cooking. Once chicken is done, add eggs and cook until eggs are done. Remove from heat and add cheese. Serve with salad and bread.



Obviously, the measurements aren't precise, so alter at will. The ingredients may not sound great on paper, but it is outstanding cooked! The original recipe was with veal, but chicken is an easy substitute.
